FULL SUN – CELERY, Celeriac Giant Prague – Apium graveolens rapaceum, native to the Mediterranean and possibly parts of Asia and Africa, celeriac was largely unknown until the 1500s. The 2-4 in., round roots have creamy white flesh which tastes exactly like celery. The roots are an excellent flavoring agent for soups and stews and can be made into a casserole “au gratin” style. Giant Prague, introduced in 1871, is considered the best of the heirloom varieties. Giant Prague should be started indoors 10-12 weeks before the last frost date. Press the seed into the soil surface. Do not cover. Soil should be deeply spaded before transplanting outdoors and tested for PH. Celeriac and celery must have neutral-slightly sweet soil (pH 7.0-7.5). Add lime to sweeten the soil. Rows should be 18 in. apart. Water generously when transplanting.
